Beyond mantı, pastırma and sucuk

Kayseri's cuisine is much broader than its three famous products. The city's food inventory ranges from soups and mantı varieties to şebit yağlaması, oven dishes, molasses-based desserts and gilaburu. Traditional houses had large kitchens with hearths, tandoor ovens and two-level pantries where fruit was dried and molasses, pickles, pepper paste and gilaburu were stored for winter.

The signature dishes

Kayseri mantı is known for very small pieces of thin dough filled with minced meat, carefully closed and finished with yoghurt and sauce; the skill is in the patience, not the size. Pastırma is beef that is salted, dried, pressed and coated with çemen, a spiced paste that gives its characteristic flavour. Sucuk, the local spiced sausage, varies by producer in spice, garlic and fat content.

Şebit yağlaması layers thin flatbreads with a minced-meat mixture and is usually served with yoghurt, a dish made for sharing. Around Develi, the pide tradition is strong; Develi cıvıklısı is a local favourite.

Soups, desserts and drinks

Everyday dishes include soups such as kurşun aşı and börek aşı, plus pehli, sulu köfte and güveç. Nevzine combines tahini, molasses and walnuts. Gilaburu, a sour red berry, is traditionally prepared as a drink; try a small glass first, as its taste is very distinctive.

Instead of ordering everything at once, build a small tasting breakfast with pastırma, sucuk, çömlek cheese and local pastries, then choose mantı or yağlama for lunch. When shopping, read the label for producer, ingredients, allergens and storage conditions, especially if you plan to carry products abroad. Many dishes contain gluten, dairy, eggs, walnuts or tahini, so share dietary needs with the tour team in advance.
